Roots Bakery & Food Bus was the other food truck available at Veggie Man Day in Fairmont. They are based Chautauqua, New York. The most "Veggie Man" themed item I saw on the menu was the "Veggie (Man) Spring Rolls, which had ramen, pickled veggies, lettuce and sweet chili sauce. This was light but punchy. I really enjoyed the texture combo of chewy and crunchy.
