PAUL Bakery was just a blip in our trip, but I did get the opportunity to taste test some of their tasty macarons. PAUL, a French bakery, is located in Assembly Row and has a few locations in DC, Maryland, Virginia and throughout Boston.
We sat inside, a refuge from the rain that day, and I stared down the case full of freshly baked bread, finely crafted desserts and delicious drinks.
So, I tasted this macaron - not having any idea where it was from - and ranked it as my most favorite amongst them! It was coconut, and had light cracks in the exterior, but the inside was super creamy and soft. Here are my notes from the ordeal:
Taste
Texture
Overall presentation
1 - small, cracks, lighter, coconut, least crunchy, filling blends seamlessly (Paul)
2 - largest, lots of filling, extra creamy, softer outside, filling a little dull (kung fu tea)
3 - fancy stripe, crunchier outside, air pocket, light creamy (finesse)
4 - small, uniform, too crunchy, large air pocket (Josh's)
Ranking: 1324
So, verdict is PAUL's has my favorite macaron in Boston. Thus far. Very yummy!

Paul is a French chain of bakery/café restaurants established in 1889 in the city of Croix, in Northern France, by Charlemagne Mayot. It specializes in serving French products including breads, crêpes, sandwiches, macarons, soups, cakes, pastries, coffee, wine, and beer. (Wikipedia)Friends had some coffee, and we got macarons to go. Funny story: Kaitlynn's boyfriend, Josh, has been on a quest to perfect macarons for the past year. And, he has done it. But he wanted to do a taste test. And, PAUL's macaron was one of them.
