Imo's Pizza is a well-known pizza shop in St. Louis that features the iconic St. Louis-style pizza.
The definitive characteristics of St. Louis-style pizza are a very thin cracker-like crust made without yeast, the common (but not universal) use of Provel processed cheese, and pizzas cut into squares or rectangles instead of wedges. - Wikipedia.

My coworker Naomi and I headed to Imo's to get a true taste. There are a few locations, but we ventured to a small one at the base of a building. We ordered the lunch special at the counter - a small, personal pizza, a salad and a drink.
So I went with a mushroom pizza. You can tell right off the bat that it's unlike any other pizza I've ever had. First, the crust is about as thin as can be possible. Crisp like a cracker. The cheese is very creamy - like a mix of mozzarella and cream cheese - but then it's browned til dark. Very different from traditional pizza but fun in its own right.
